Let's make a simple yet delicious pasta meal. Grab any of your favourite dry pasta from your favourite supermarket and once you get home you just plug and play. I personally like to use penne. Penne is a type of pasta with cylinder shaped pieces.

Penne is the plural from the Italian penna, and is a cognate of the English word pen. I simply add my all-time spices, garlic, ginger and cooking cream. You can use fresh cream if you wish. Add some fish to balance the meal. Enjoy this Italian inspired meal.

Penne pasta with fish

Ingredients
300g fish fillet
2 tablespoon Oil
500g pasta
300ml cooking cream
Juice of 2 limes
1 chopped onion
1 tablespoon garlic ginger paste
Pinch of salt
1/2 teaspoon black pepper
1/3 teaspoon of paprika

Method
To begin, marinate the fish with some lime, salt and half of the garlic ginger paste, pan sear the fish with oil in a hot pan until cooked and golden brown on both sides, set aside. Lightly fry the chopped onions until golden brown, add the remaining garlic ginger paste and fry for a further two minutes.

Add half lemon juice and let simmer for one minute, then add in the cream and remaining lemon juice. Let this simmer so that the liquid is reduced and flavors are absorbed. Be careful not to have the pan on a high heat as this will cause your sauce to be lumpy.

Flavour your sauce with salt and pepper and sprinkle some paprika. In the meantime, bring a pot of water to the boil. Add salt and olive oil and your pasta.
