Easy recipe: Delicious egg curry

Eggs have been an all-time favourite in most households for breakfast, lunch, dinner or even as a snack. It can be made in various ways to suit one's preferences.

Egg curry is a simple and delicious meal to make. It is not at all time-consuming and the ingredients used are readily available at our homes.

The ingredients needed to make egg curry include:

4 eggs

1 large red onion

3 tomatoes.

2 garlic cloves.

1 bell pepper.

2 tablespoons of preferred cooking oil.

Salt to taste.



Black pepper.

Coriander to garnish.


In a sufuria pour in water, and hard boil your eggs for about 15 to 20 minutes. Heat your cooking oil in a saucepan, then add your finely chopped onion and fry till golden brown.

Mince your garlic cloves and add them to the onions, roast them till aromatic. Blend your tomatoes and add them to the onions.

Do not forget to check on the eggs, if done shell them, make small cuts on them (this is done so as to let the eggs soak in all the flavours present) and set aside. Add in your spices and stir well, pour in the diced pepper and mix well. Let the mixture simmer before adding the eggs.

Let the eggs cook for a while before adding your coriander for garnish. The eggs are now ready, they can be served with rice, ugali or spaghetti. Enjoy!
