1kg eggplants, sliced and salted
3 tablespoons vegetable oil

1 onion, finely chopped
1 teaspoon garlic paste

Juice of 1 lemon
1 teaspoon turmeric powder
What to do:
In a nonstick pan over medium heat, put in 2 tablespoons of oil and pan-sear the sliced eggplants until golden brown on both sides.
In a separate pan over medium heat, put 1 tablespoon of oil and saute the onions until soft.
Add the garlic paste then go in with the turmeric powder and bouillon cube. Cook until fragrant then add the coconut cream.
Bring to a boil until it thickens, then add the lemon juice. Once the coconut sauce is cooked, mix with eggplants and give it a good mix until well combined.
Serve with ugali or rice.
