Easy recipe: Delicious gazpacho

Gazpacho is a refreshing and vibrant cold soup that has become popular all over the world thanks to its delicious flavours and healthy ingredients.

Let's make a classic gazpacho recipe that will delight your taste buds and keep you cool during these warm days.

Ingredients:

Four large ripe tomatoes

One cucumber, peeled and diced

One red bell pepper, seeded and diced

One small red onion, finely chopped

Two cloves of garlic, minced

1/4 cup extra-virgin olive oil

Two tablespoons of red wine vinegar

One tablespoon of fresh lemon juice

One teaspoon salt (or to taste)

1/2 teaspoon ground black pepper (or to taste)

Optional garnishes: diced cucumber, diced tomatoes, fresh herbs (such as basil or parsley), and a drizzle of olive oil.

Instructions:

Begin by preparing the ingredients. Core the tomatoes and roughly chop them. Set aside a small portion of the diced cucumber, diced tomatoes, and any other garnishes you'd like to use for serving.

In a blender or food processor, add the chopped tomatoes, diced cucumber, red bell pepper, red onion, minced garlic, extra-virgin olive oil, red wine vinegar, and lemon juice.

Blend the ingredients until you achieve a smooth and creamy consistency. If you prefer a chunkier texture, blend for a shorter amount of time.

Taste the gazpacho and season with salt and black pepper according to your preference. Feel free to adjust the acidity by adding more lemon juice or vinegar if desired. Give it a quick blend to incorporate the seasonings.

Transfer the gazpacho mixture to a large bowl or airtight container and refrigerate for at least 1-2 hours to allow the flavours to meld together and chill.

Once chilled, give the gazpacho a good stir before serving. You can also adjust the consistency by adding a splash of water if it seems too thick.

Serve the gazpacho in chilled bowls or glasses. Top each serving with the reserved diced cucumber, diced tomatoes, fresh herbs, and a drizzle of olive oil if desired.

It's best served cold as an appetiser and can be stored in the refrigerator for up to 2-3 days. Enjoy!
