Commonly known in Swahili as ‘maini’, edible liver comes from cows, pigs, chicken and goat. Liver is a rich source of protein, at its purest form. It also has other nutrients such as Vitamin A - which is great for eyes and skin, Vitamin B12, Vitamin K, folic acid, and iron, which are good for blood production.
Liver also has Vitamin C, which is an immunity booster and Vitamin E, an antioxidant that prevents cell damage.
Pregnant women are discouraged from eating liver because it has high levels of retinol, which is a type of Vitamin A.
Liver can be enjoyed in various ways such as grilling, stewing, sautéing, pureeing or frying it. It goes very well with ugali and some greens or rice and steamed vegetables.
You can buy liver from your local butcher or supermarket, based on the desired amount.
