What you will need:

4 medium potatoes, cut into wedges and blanched

1 1/2 tablespoons of olive oil

1/2 teaspoon of paprika

1/4 teaspoon of minced garlic

1/8 teaspoon cayenne pepper (Optional)

1 teaspoon of salt

1/4 teaspoon of ground black pepper

4 tomatoes, halved

5 garlic cloves

What to do:

Preheat the oven to 180 degrees Celsius.

In a large bowl, combine the olive oil, paprika, garlic, cayenne pepper, salt and black pepper. Add the potato wedges and toss to coat them in the seasoning.

Arrange the wedges in a baking tray, add the tomatoes and garlic cloves, and bake for 20–25 minutes at 180°C, or until golden brown and crispy. Serve with ketchup and fish.

FOR THE FISH:

1kg of fresh fish steaks

1 tsp garlic paste

Juice of 1 lemon

Salt and pepper to taste

1 tsp paprika

1 tablespoon of honey

Method:

Marinate the fish in all of the above ingredients for about an hour. In a deep frying pan, heat some vegetable oil over a medium heat.

Once the oil is hot, deep-fat fry the fish until it is browned and cooked through. Serve with potato wedges and grilled tomatoes. Enjoy!
