Disiac: ‘Mbuzi’ with steamed potatoes and greens all in one pan

Here is a fantastic way to prepare ‘mbuzi’ (goat meat) at home with some steamed potatoes and greens, all cooked in one pan.

What you will need:

1 kg goat meat cut into chunks (soaked in 1/2 cup white vinegar for 4 hours)

1 teaspoon curry powder

1 teaspoon black pepper

1 tablespoon garlic ginger paste

1/2 cup white vinegar

1 tablespoon oil

1/2 cup cherry tomatoes (for garnish)

1 large onion sliced

3/4 kg potatoes peeled and halved

1/2 bunch collard greens (sukuma)

1/2 bunch spinach

1 and 1/2 cup water

What to do:

Marinate the meat with the vinegar, salt and black pepper. In a pan over medium heat, add the oil and pan sear the meat until brown, stirring occasionally so that it cooks evenly. It will produce its own juices.

Continue to stir until almost all the liquid is evaporated. Add the garlic ginger paste, curry powder, onions and stir well to combine all the ingredients. Add the water and bring to a boil then add the potatoes.

Over the potatoes and meat, layer the entire pan with collard greens (sukuma wiki) and spinach leaves. Arrange as much greens as possible, sprinkling some salt as you layer them over the potatoes. Cover with a tight lid and slow

cook over low heat for another 30 minutes.

When serving, first remove the greens and arrange them on the platter. Next, place the meat and potatoes over the greens. Garnish with some cherry tomatoes and serve as a meal on its own. The potatoes will have cooked perfectly with the steam and the greens will just be delicious to go with the meat.
