Easy recipe: Swahili coconut fish curry

After the week’s hustle and bustle, nothing beats having a meal that you relish.

Swahili mchuzi wa nazi (coconut fish curry), is a simple yet delicious dish that you can easily whip up and enjoy with plain rice. You can use any fish of your choice, as long as it is fish steaks.

What you will need:

500g fish steak (tuna or kingfish)

1 tablespoon garlic

1 tablespoon ginger

1 teaspoon cumin seeds

Salt to taste

1/2 teaspoon black pepper

Juice of 1 lime

2 onions, diced

1 raw mango, diced

2 tomatoes, diced

1½ cups coconut milk                                                                               

1 tablespoon tomato paste

1 teaspoon curry powder

Salt to taste

What to do:

Marinate the fish with garlic, ginger, cumin, lime juice, pepper and salt. Pan sear it until well done. Remove fish from pan and set aside.

Blend onions, tomatoes and coconut milk; put the mixture in a pan and bring to a boil. Add tomato paste, raw mango, curry powder and salt.

Simmer for a few minutes, until the curry is thick. Squeeze in the lime juice and put the fish back into the pan. Garnish with freshly chopped coriander, and serve with plain white rice.
