For the herb chicken you will need:
1 chicken, cut into four pieces
Salt to taste
1 teaspoon black pepper
1 teaspoon turmeric
70g tomato paste
1 teaspoon basil herb

1 teaspoon mint herb
2 tablespoons vinegar
Score (make slits) in the chicken and marinate it with the ingredients above. Pan sear until golden brown and set aside. Using the same pan, add in;
1 tablespoon butter
1 onion, diced
2 cloves of garlic, sliced
2 tablespoons flour
2 cups of water
Mix the ingredients well using a spatula. Season with salt, and add the pan-seared chicken. Slow cook until the sauce is thick and the chicken is cooked towards the inside. Enjoy it with the veggies.
For the veggies you will need:
1/4kg okra, cut into chunks
3 tablespoons oil
3/4kg potatoes, cut into small cubes
1 onion, diced
1 sweet pepper, diced
3 tomatoes, cubed
3 bouillon cubes or salt to taste
1/2 cup water
Method:
In a pan over medium heat, saute the okra and set aside. Using the same pan add the oil and saute the potatoes until semi-cooked.
Add the onions and sweet pepper, and mix well. Crumble in the bouillon cubes/salt and add the water. Mix well and simmer.
Now add in the tomatoes and cook for five minutes, or until the liquid is almost evaporated. Your veggies are ready to eat. Enjoy!
