
Let’s bake this delicious coconut cake with cream cheese frosting!
What you’ll need:2 eggs
250g sugar
250g flour
20g of coconut
powder
125ml coconut oil
1 teaspoon of vanilla essence

3/4 cup coconut milk
3 teaspoons of baking powder
What to do:Beat the eggs and sugar together until fluffy. In a separate bowl, mix all the other ingredients until you get a thick batter. Mix the flour with the egg and sugar mixture, then pour the mixture into a greased baking tray. Bake at 180°C for 50 minutes to 1 hour, or until a skewer inserted into the centre of the cake comes out clean. Remove from the oven and leave to cool.
For the frosting:150g butter
75g cream cheese
400g icing sugar
20g coconut powder
1 teaspoon of vanilla essence.
Sweetened coconut flakes (for topping).
What to do:Mix all of the above ingredients, except the coconut flakes, together using an electric mixer until fluffy. Use this mixture to frost the cooled cake, then finish off with sweetened coconut flakes or desiccated coconut. Enjoy!
