Ramadan is around the corner, and this fried onion-smothered chicken would make a delicious iftar (the fast-breaking evening meal of Muslims in Ramadan).
What you need:
1 whole chicken cut into 12 pieces
1 teaspoon garlic mince
1 teaspoon ginger mince
1 teaspoon whole cumin
1 teaspoon black pepper
1 teaspoon paprika

1 teaspoon turmeric powder
Salt to taste
3 onions, sliced and fried until golden
3 tablespoons white vinegar
What to do:
Marinate the chicken with the above ingredients and set aside to infuse flavours for about 30 minutes.
For the saute:
3 tablespoons oil
1 teaspoon garlic mince
1 capsicum, diced
250ml sour milk
Method:
Drizzle the oil in a pan and saute the garlic ginger mince over medium heat.
Add the marinated chicken and cook for about five minutes, flipping the chicken now and then. Add the sour milk (maziwa lala) and simmer until the liquid reduces and the oil starts to bubble. Add fried onions for garnish.
Serve with rice and a side of Swahili mango pickle. Enjoy!
