Easy recipe: Coleslaw salad

Apart from colouring your meals, coleslaw has a blend of nutritional benefits based on the different ingredients involved.

It is rich in fibre, Vitamin C, and K which are obtained from the cabbage. Carrots are high in beta-carotene which contributes to eye health while apple cider vinegar aids in digestion.

In case you need to add this to your Christmas dishes, here is a simple method on how to make it.

Ingredients:

1 small head of green cabbage, finely shredded

1 large carrot, grated

½ cup mayonnaise

¼ cup sour cream

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

2 tablespoons honey or sugar

Salt and pepper to taste

Chopped fresh parsley or celery seeds for added flavour, optional

Instructions:

In a large mixing bowl, combine the shredded cabbage and grated carrot. Toss them together to mix evenly.

In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, honey or sugar, salt, and pepper until the dressing is smooth and well combined.

Pour the creamy dressing over the cabbage and carrot mixture. Use a spatula or large spoon to gently toss and coat the vegetables evenly with the dressing.

Taste and adjust seasoning if needed. If desired, sprinkle with chopped fresh parsley or celery seeds for an extra layer of flavour.

Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavours to meld together before serving. Enjoy!
