Fruit and cake layered dessert: Don't toss those cake crumbs!

Let’s make a fancy and delicious fruit and cake layered dessert glass. It’s the perfect way to make use of leftover cake. You’ll need the cake in rough cubes or crumbs with fresh watermelon, bananas, whipped cream, chocolate whipped cream, diluted jam or cooked strawberries.

This will depend on what you have at home. If you have jam, feel free to dilute it with a few tablespoons of water to make a sauce or just cook up some strawberries with sugar for a homemade jam sauce. 

What you will need:

200ml sweetened whipping cream

200ml chocolate whipped cream (add 40g cocoa powder to make your own)

100g strawberry sauce (dilute jam or cook strawberries with some sugar)

2-3 bananas, sliced

Juice of 1/2 lime

2 slices of watermelon

100g vanilla cake (any flavour works)

Piping bag

 

What to do:

Using a hand whisk, whisk the whipping cream until it is firm and has a pipe-able consistency.

Cut your cake into rough cubes or crumble it up with your hands. Set aside.

Cut tiny cubes of the watermelon, peel the bananas and cut them into thin slices then squeeze some lime juice on them so that they don’t get discoloured.

Put the whipped cream in a piping bag and set aside then take another piping bag and fill it with chocolate whipped cream.

In a tall glass, layer the strawberry sauce, then whipped cream, then cake crumbs over the whipped cream, and finally chocolate whipped cream.

Arrange some banana slices on the side of the glass so that they are visible on the outside.  Add the watermelon cubes, then pipe another layer of white whipped cream.

Dribble some extra strawberry sauce over the whipped cream and then pipe a good amount of chocolate whipped cream to fill up the glass. Finish off with bananas slices as a garnish.

Repeat the same steps in two more glasses.
