Most people view eggs a breakfast meal only and forgetting that they can also make tasty meals for lunch and dinner.
They can be fried and scrambled to be eaten with ugali, or mixed with rice. Let's learn how to make the latter:
Ingredients:
4 eggs
1 cup of rice
2 large onions
1 green pepper
2 tomatoes

Spices (cumin, garlic, soy sauce, turmeric, and any other of your choice)

Instructions:
Boil the rice as we prepare the groceries. Heat enough cooking oil in a different cooking pot. Add your chilies and let them cook for half a minute.
Put in the onions, saute until they start turning golden brown. Add in your tomatoes immediately followed by two pinches of salt.
Once the tomatoes start softening, add in your spices. Stir to mix them properly. Crack your eggs onto the mixture.
When you are done, stir to make sure the eggs don't stick on to the pot. Continue until they are fluffy.
Add in the boiled rice. Stir until they rice is well incorporated into the mixture. Serve while hot and enjoy!
