One tomato, diced
Two tsp of chilli powder (Optional)
One tsp of cumin
1/2 tsp of paprika
Salt to taste
Toppings: Sour cream, guacamole, salsa,
In a large skillet, brown the ground beef over medium heat until cooked through. Drain excess fat if necessary. Add diced onion, minced garlic, and diced bell pepper to the skillet. Cook for 2-3 minutes until vegetables are tender.
Stir in the black beans, diced tomatoes, chilli powder, cumin, paprika and salt. Simmer the mixture over low heat for about 10 minutes, allowing the flavours to meld together.
While the meat mixture is simmering, warm the tortillas in a dry skillet or microwave according to package instructions. Spoon a generous portion of the meat mixture onto the centre of each tortilla. Sprinkle with shredded cheese.
To roll the burritos, fold the sides of the tortilla towards the centre and then roll it up tightly from one end to the other. If desired, you can place the rolled burritos on a baking sheet and bake them in a preheated oven at 175°C for about 10 minutes to melt the cheese and crisp up the tortilla slightly.
Serve the meat burritos with your favourite toppings such as sour cream, guacamole, salsa, or chopped fresh cilantro. Enjoy!
