This weekend, let's make some sirloin steak rubbed with garlic and ginger paste. Use raw paw paw purée to tenderise the meat.

We will also prepare some delicious coriander-crusted sweet potatoes. All you need to do is partly boil them and then toss the potatoes with gorgeous flavours and roast them in the oven to get a scrumptious crust over them. Let's get started.
Sirloin steak
500g well edged sirloin steak cut into 4 slices 1 teaspoon garlic and ginger paste 1 teaspoon black pepper 1 lime juice squeezed 1 slice of raw paw paw (squeeze to get purée) Salt to taste 2 tablespoon oil for pan searingCoriander crusted sweet potatoes
1kg sweet potatoes cubes (par boiled) 1 handful of fresh coriander, chopped 2 tablespoon melted butter 1 teaspoon garlic paste Oregano (optional) Salt to taste 2 tomatoes -- cut into wedges 2 eggplants -- slicedGrilled tomato wedges and eggplants for garnish (just cut into wedges and pan sear on the same non-stick pan)
Rub the sirloin steak with salt and pepper then spread over the paw paw purée then top up with garlic and ginger paste, lime juice and place in the fridge for around 2 hours.
In a hot non-stick pan, put some oil, add two whole cloves of garlic and place the marinated steaks sealing the pores on both sides plus the fat side so that the fat layer gets golden brown. Finish off in an oven for about five minutes then serve with the sweet potatoes.
Using the same pan, grill the tomato wedges and egg plant on both sides and serve with the meal.
To par boil the sweet potatoes, put in a pan with hot boiling water and a pinch of salt and let it cook for about five minutes. Remove from the heat and discard the water then sprinkle the chopped coriander and melted butter. Place inn the oven for 30 minutes or until golden brown. Serve with the sirloin steak.
