What to do:
Cut the apples into quarters. Trim the centre of each quarter and cut them into rough cubes. Squeeze lemon juice over the apples to prevent them from turning brown.
Cut your boiled potatoes into cubes. Remember not to peel the skin, as this gives a nice texture and colour.
Mix the potatoes and apples in the same bowl, then add salt, black pepper and paprika. Mix well, then stir in a heaped tablespoon of mayonnaise.
Chop some coriander and sprinkle it on top, then add the raisins. Using two tablespoons, toss the salad together, ensuring that everything is well mixed. Your apple and potato salad is now ready to serve.
For a healthier option, use thick yoghurt and garnish with coriander.
