This weekend, surprise your family or spouse with lamb chops. You can add coconut cream to give it extra flavour. We will serve ours with sautéed cabbage.
What you will need:-
500g lamb chops 3 garlic cloves minced 1 teaspoon black pepper 1 and 1/2 teaspoon curry powder 1/2 cabbage shredded 2 onions sliced 2 tomatoes diced 1 teaspoon curry powder Salt to taste Juice of 1 lemon 120ml coconut cream 1 tablespoon oil Fresh coriander for garnishingWhat to do :-
Marinate the lamb chops in a mixture of minced garlic, salt, black pepper and juice of half lemon. Ensure the lamb chops are well covered and leave them to marinate for two hours. In a pan over medium heat, add 1 tablespoon of vegetable oil, pan sear the lamb chops for two minutes each side or until golden brown. Once lamb chops are cooked, sprinkle 1/2 teaspoon of curry powder, add the coconut cream and let them cook for about five minutes. In a different a pan over medium heat, add some oil, then sauté the onions, add the diced tomatoes, add 1 teaspoon of curry powder and some salt. Mix well until fragrant Add the shredded cabbage, let it cook until it softens to your liking, add juice of half lemon and let it cook until all the liquid evaporates. Serve your meal and garnish with some coriander.
