Tacos is a traditional Mexican dish composed of a corn or wheat tortilla (dry chapati) folded or rolled around a filling. Well... since we are in Africa we simply make it our own way and give it our own name - how about filled chapos?
Chicken and cheese filled chapos (tacos)
Ingredients:
500g boneless chicken
300g cheese
1 teaspoon garlic paste
1 teaspoon garam masala
1 tablespoon oil
Salt to taste
Tomato concasse
Dry chapatis
Directions:
Cut the chicken into strips, marinate with garlic paste, garam masala, salt to taste, black pepper and lime.
In a pan over medium heat, put 1 tablespoon of olive oil, sauté the marinated chicken strips until golden brown.
Take your dry chapatis and place them on the back of a muffin baking tray, spread a tablespoon of tomato concasse (get the tomato concasse recipe on www.evewoman.co.ke) then fill with some chicken, prinkle some cheese and oregano on top.
Bake for 10 minutes.
To make the dry chapatis, you will need;
2 and a half cups of flour
2 tablespoons oil
3/4 cup of water
Salt to taste
Mix all the ingredients and knead into a soft dough, divide the dough into 6 pieces and roll each each piece to a thin flat bread (chapati)
Cook the flat bread without oil on a hot pan. ??
