Sainsbury's Quick Sausage Casoulet
Ingredients
-454g pork sausages
-1 onion, diced
-2 carrots, peeled and diced
-390g chopped tomatoes with basil, chilli and oregano
-410g butter beans, drained and rinsed
-410g cannellini beans, drained and rinsed
-100g sage and onion stuffing mix
From the store cupboard
-1 tbsp sunflower oil
-2 tsp paprika
-150ml chicken stock
-pinch of freshly
-ground pepper
Method
-Preheat oven to 200C/fan 180C/Gas 6. In a large frying pan, heat the oil and fry the sausages for 5 minutes until golden. Add the onion and carrots and paprika and fry for 2 minutes.
-Add chopped tomatoes, stock and beans and simmer for 5 minutes. Meanwhile, make stuffing mix in a bowl. Set aside.
-Season sausage mix with black pepper and transfer to a large, shallow baking dish.
-Top with stuffing, bake for 10 minutes and then serve.
