Ingredients:
• 500g boneless chicken, cubed
• 6-8 green chillies, slit length wise
• 2 spring onion sticks, cut into ½ inch pieces
• 3 tablespoons vegetable oil
Marinade:
• 2 tablespoons ginger-garlic paste
• 4 tablespoons light soy sauce
• 1 tablespoon vinegar
• 1 teaspoon red chilli powder
• 1 teaspoon sugar
• ½ teaspoon ajinamoto
• ½ teaspoon salt
• 2 tablespoons sherry (optional)
Directions:
1. In a glass bowl, combine all the marinade ingredients and mix well.
2. Put the chicken pieces into the marinade and let seat for at least two hours or overnight in the fridge.
3. In a shallow frying pan, heat the oil over medium heat. Fry the green chilies lightly, then remove from the heat.
4. In the same pan, add the marinated chicken, let it fry until dry.
5. Add the fried green chillies toss, and then serve sprinkled with the spring onion.
