What to do:Lay the ribs on a large platter and sprinkle with salt, ensuring it is distributed evenly. Add the garlic and ginger paste, then the cumin, ginger and paprika. Finally, add the honey. Pour in the white vinegar, use your hands to mix all the ingredients together, ensuring the marinade is distributed evenly over the ribs, and give them a couple of turns. Leave to marinate for about two hours to allow the flavours to infuse well into the ribs and tenderise them.
Heat some vegetable oil in a pan over a medium heat and sear the ribs until golden brown on both sides, about five minutes on each side. Once browned, remove them from the pan and arrange them on a baking tray with tomato wedges. Put the ribs in the oven at 200°C for about one hour. Remove them from the oven and let them rest for about five minutes before serving with ugali. Enjoy!
