Recipe: Lemon pepper tilapia, anyone?

Some flavour pairings are natural; apples and cinnamon, garlic and tomatoes, and of course, lemon with fish.

Lemon has a sour taste; this comes from the citric acid.

When we squeeze lemon juice onto fish, we set up a reaction that neutralises the fishy smelling amines thus greatly improving the taste of fish.

Serves: 4 Prep Time: 5 minutes Cook Time: 25 minutes Ready In: 30 minutes

Ingredients:

 4 small-sized tilapia fish, de-scaled and cleaned  2 tablespoons ovegetable oil 1 teaspoon white pepper Lemon juice from two lemons  Herbal salt to taste

Directions: In bowl, combine the white pepper, salt, and lemon juice.

Over medium fire, heat your vegetable oil, as the oil is heating, brush the fish with the lemon, pepper mixture.

Place the fish onto the pan with now heated vegetable oil.

Let cook on each side for 10-15 minutes or until cooked.

Serve with lightly fried vegetables.
