Should you store eggs in your fridge door?

You've seen it, that egg compartment staring at you immediately you open the fridge. One wonders, should you, therefore, store your eggs in that section?

After much controversy about this, Dr Stuart Farrimond wrote on the topic in a new book debunking common food myths called The Science of Cooking. In it, he highlighted how egg dishes are affected when eggs are stored on the fridge door.

The British Egg Information Service advises that for 'optimum safety' eggs should be stored in boxes at a consistent temperature below 200C (68F) away from strong-smelling food as eggs easily absorb odours.

Keeping eggs on the fridge door is discouraged from a view point that, it is the part that has the most temperature fluctuations. Every time you open the fridge, hot air from outside the fridge enters it and this changes the temperature with the cold air inside the fridge. This temperature fluctuation does not augur well with eggs.

When it comes to cooking, you'll realize that, you need eggs that are at room temperature in many dishes, unless you are intending to make boiled or scrambled eggs only. The opening of the fridge will distabilize the egg whites, which in turn mean you can't make your meringues and fried eggs perfectly.

For good storage, you can keep the eggs in a room temperature and if you are keeping in the fridge, maintain them in the box. Put them on the middle compartment side away from flavorful foods.

Avoid moving eggs a lot as you search to remove this and the other. Not only can they break, but they can also get the variations in temperature, which as you've learnt, is bad for eggs.
