Ingredients:
• 1 cup self raising flour
• 1 cup yellow maize meal flour
• 1 cup grated cheddar cheese
• 3 slices of ham, chopped
• 1/3 cup parsley, finely chopped
• 1 cup milk
• ¼ cup vegetable oil
• 2eggs
Directions:
1. Preheat oven to 1800C. Prepare your oven tin (shallow rectangular baking tin 30X20) by brushing it with vegetable oil or melted butter/margarine then line it with grease proof paper.
2. Sift the flour into a bowl, add the maize meal flour, cheese, ham and parsley then make a well in the centre.
3. Add the milk, oil and eggs to the dry ingredients. Stir with a wooden spoon until just combined, do not over beat.
4. Pour the mixture onto the baking tin, smooth the top, then bake for 30 minutes or until skewer/fork comes out clean when inserted into the centre of the corn bread.
5. Remove from the oven and let stand still in the baking tin for about three minutes before turning it out onto a wire rack, to cool.
