Easy way to prepare whole roast chicken stuffed potatoes

Here is the easiest holiday roast chicken that you can whip up at home. All you will need is your full capon (large chicken), about 1 kg or so, some potatoes and a few spices and herbs. It’s the perfect holiday treat for the family. 

 What you will need: 

1 kg chicken

1/2 kg potatoes, cubed

Juice of 2 limes

1 yellow sweet pepper 

1/2 bunch rosemary 

1/2 teaspoon turmeric 

1/2 teaspoon black pepper 

1/2 teaspoon coriander powder 

1/2 teaspoon chili flakes 

2 garlic cloves 

Salt to taste 

1 onion sliced 

 What to do: 

Place the whole chicken on a baking tray. Sprinkle the black pepper on the chicken, rubbing all around it. Add salt, coriander powder and turmeric powder then grate the garlic cloves over the chicken.

Add the lime juice. Do not throw the lime rinds away just place them on the baking tray. They produce a beautiful flavour when roasted with veggies. Add the chili flakes and rub everything well all over the chicken, ensuring the marinade is also distributed towards the chicken cavity.

Stuff the potatoes into the chicken cavity, tuck the chicken wings at the back just by twisting them gently over the back, add the rosemary sticks in the cavity as well as the lime rinds.

Bake or roast in the oven at 220 degrees Celsius for about one and a half hours, checking the chicken every 30 minutes. After an hour, remove the chicken and sprinkle the sliced onions on the pan then take it back to the oven for the final 30 minutes.

Once cooked, remove the potatoes from the chicken cavity and serve them hot with the chicken. You can garnish the dish with some basil leaves.
