Yields 6-10 pancakes

INGREDIENTS:
• 1 egg
• 2 cups flour
• 1 teaspoon baking powder
• Pinch or 2 of salt
• 1 cup milk
• 2 teaspoons vanilla essence
• 4 tablespoons vegetable oil
• 400g collar bacon, fried crisp
• Maple Syrup or honey
DIRECTIONS:
• Mix the flour and baking powder in a bowl and set aside
• In another mixing bowl, beat the egg, milk, salt and vegetable oil. Add the mixture to the flour mixture and mix till smooth.
• Heat a pan and brush with a little vegetable oil.
• Pour some batter onto the hot pan (desired size). Let batter cook until little bubbles from on top, turn over let cook, until cooked through, remove and set aside.
• Repeat until you’ve cooked all the batter.
Serve hot with the crisp bacon with either maple syrup or honey.
