Matoke is an indigenous dish in Uganda widely enjoyed by locals. However, it has since crossed borders to countries like Kenya, where locals like the Kisii community also consider it their staple food.

This mouthwatering dish is prepared using plantain, this is because it is eaten after cooking, unlike bananas that don’t have to be cooked.

Matoke can be prepared in different kinds of styles depending on your preference. Some may prefer to boil and mash it while others like to fry and have it in stew. Either way, matoke is an easy and delicious meal to prepare for your family and friends.

Here are the ingredients you will need to prepare matoke:

4-5 plantain pieces One large onion Two fresh tomatoes Three cloves of garlic ½ of green bell pepper Coriander leaves One green chili Curry powder (optional) One cup of water ½ teaspoon of salt Three tablespoons of cooking oil

Method:

The first step is to peel your plantain. To prevent your hands from turning black due to the plantain residue, you will need to apply cooking oil or margarine on your hands before you start peeling.

After peeling your plantain, you can either chop then into smaller circular pieces or cook them whole.

In a large cooking pan, add your cooking oil and let it heat up. Add your finely chopped onion and occasionally stir, then next add your pounded garlic to the mixture and grated green chili and continue stirring until the mixture turns golden brown.

Then next you will add your blended tomatoes and finely cubed green bell pepper to the mixture and continue stirring the mixture.

After about 4-5 minutes, add salt and curry powder and continue stirring to blend in the spices. Finally add your plantain and stir well to allow the mixture to coat the plantain well.

Then add water to the mixture and cover with a lid to trap in all the moisture while it simmers. Allow it to cook for 10 minutes.

After 10 minutes, you can taste a piece to ensure its ready, if not you can add some more water and let it cook some more. But in case you want to mash your plantain, you can let it cook for longer so it can be tenderer to make it easy to mash.

Once ready, garnish your matoke with coriander leaves. This dish is best served with beef stew or groundnut sauce. Enjoy!
