Ingredients:
• 2 cougettes, cut into 1½ inch slices
• 4 cups cooked rice
• 2 cloves garlic, crushed
• ½ teaspoon cumin powder
• 2 tablespoons mild chili powder
• 1.5 litres vegetable stock
• Salt and pepper to taste
• Lime wedges to serve
• 2 tablespoons vegetable oil
Directions:
1. Heat the oil in a cooking pot and add the garlic. Cook for two minutes then add the cumin and chili powder. Cook for a further one minute.
2. Add the vegetable stock, cooked rice and courgettes and bring to a boil. Reduce the heat and simmer for 10 minutes or until the courgettes are tender. Season with salt and pepper.
3. Serve with the lemon wedges to squeeze into the soup if desired.
