Eid al-Adha is a time for family gatherings and festive meals. It is a joyful time of togetherness, when the act of sacrifice symbolises gratitude and devotion to Allah. But what would an Eid breakfast be without fried liver in a Swahili household? We like to keep things simple yet delicious. 

Let’s get cooking!

What you will need:

1 kg of goat or mutton liver, cut into cubes

2 tablespoons of vegetable oil

2 diced onions

1 tablespoon of minced garlic and ginger

1 diced capsicum

Salt and pepper to taste.

1/4 cup white vinegar  

What to do:

In a pan over medium heat, add the oil and sauté the onions until they are slightly golden. Now add the garlic and ginger mince and sauté. Then add the capsicum and mix well. Now add the cubed liver, ensuring that you have removed the thin membrane, which will help the liver to cook well and not become tough. Mix well, then add the salt and pepper. Continue to cook, then add the white vinegar. Cook until the liquid is thick, then serve with the Mahambri. Enjoy!
