Easy recipe: Sweet and sour chicken

Packed with goodness and flavour, this sweet-and-sour chicken recipe will have you begging for more.

And the best thing about it is that it is quick and easy to make with ingredients that are readily available at home.

Ingredients:

Three chicken breasts.

One red bell pepper.

One yellow bell pepper.

One green bell pepper.

pine apple.

One large onion.

One egg.

Three cups all-purpose flour.

Two table spoons soy sauce.

Black pepper.

Paprika.

Salt to taste.

For the sauce:

Three table spoons ketchup.

Two table spoons brown sugar.

Two table spoons vinegar.

cup chicken stock.

One table spoon corn starch.

Instructions:

Prepare your chicken by washing and dicing it.

In a large bowl, put the chicken cubes, soy sauce, black pepper, paprika, salt, flour and one egg to make a wet marinade.

Wash and cut your vegetables to your preferred size and set aside. Do not forget your pineapple.

In a small bowl, mix together the ketchup, brown sugar, vinegar, chicken stock and cornstarch to make the sauce.

Preheat the oil in a frying pan and make a flour mixture to coat the chicken cubes in.

Add black pepper, salt, baking powder and cornstarch to the flour and use it to coat the chicken pieces well, leaving no bald spots.

Shake off any excess flour and fry the chicken until golden brown, about 4-5 minutes, then set aside while the oil reheats.

Fry the chicken again to make it crispy, this will take two to three minutes.

In another frying pan, add a little oil, then your vegetables, then your pineapple, stirring until all the juices come out.

Add your pre-prepared sauce and stir to incorporate all the flavours, letting it thicken slightly.

Add your chicken pieces to the mixture and toss for a few minutes to coat well before serving with a hot plate of aromatic rice.
