Living
Lamb chops in coconut with fried cabbage by Chef Ali

What you will need:

500g lamb chops

3 garlic cloves, minced

1 teaspoon black pepper

1 and 1/2 teaspoon curry powder

1/2 cabbage shredded

2 onions sliced

2 tomatoes diced

1 teaspoon curry powder

Salt to taste

Juice of 1 lemon

120ml coconut cream

1 tablespoon oil

Fresh coriander for garnish

What to do :-

Marinate the lamb chops with the minced garlic, salt to taste, add some black pepper, squeeze juice of half a lemon and mix well until all the flavours are distributed over the lamb chops. Set aside for about two hours to marinate.

In a pan over medium heat, add in one tablespoon of vegetable oil, pan sear the lamb chops about two minutes each side or until golden brown. Once lamb chops are cooked sprinkle 1/2 teaspoon of curry powder and then go in with the coconut cream. Let it cook in the cream for about five minutes and set aside.

Now you can start making your cabbage, in a pan over medium heat add in some oil and then sauté the onions until nice and soft. Add the diced tomatoes, add one teaspoon of curry powder and salt to taste.

Mix well until fragrant then go pour in the shredded cabbage and cook until the cabbage softens. Once the cabbage is nice and soft, add half of the lemon juice and then cook until all the liquid is evaporated.

Serve the cabbage on a plate with the lamb chops and garnish with some coriander leaves. Enjoy
