Making the best homemade fluffy pancakes only calls for a few simple ingredients that you probably already have in your kitchen.

Ingredients:

1 cup all-purpose flour: You can use either all-purpose flour or whole wheat flour. If you like, you can combine the two. 2 tablespoons of brown sugar: You can use granulated sugar, however, brown sugar is the best as it will make your pancakes a little moister. 1 teaspoon baking powder: This is what makes your pancakes light and fluffy. Ensure you include it in your ingredients list. ½ teaspoon salt: Salt balances the sugar and brings out the flavours in the pancakes. Depending on your other ingredients, you can use little salt like ¼ teaspoon, especially if you are using salted butter. ¾ cup of milk: There are no restrictions when it comes to milk. You can use whole milk, reduced-fat milk or even skim milk. You can also substitute dairy milk with plant based milk such as almond or coconut milk. 2 tablespoons of melted butter 1 egg: The eggs add structure and helps make the pancakes light and fluffy. Vanilla Extract (or any other flavor you like): Vanilla adds sweetness and depth of flavor to your pancakes. You can also try other extracts. Cooking spray

Directions:

Whisk the flour and baking powder (dry ingredients) in a large bowl Melt butter and warm milk In a separate bowl, whisk the butter, milk and eggs (wet ingredients) together Mix the wet and the dry ingredients and stir until just combined Heat your nonstick pan on low heat. Coat with cooking spray and pour about ¼ cup-full of batter onto the pan Cook until bubbles appear on the surface Use a spatula and flip and cook the other side until browned Enjoy

Here are more tips to make your pancake recipe the best:

Cooking: Cook over medium heat. It takes longer but the results are better. Use a non-stick pan for the best results

Oiling: Spray the pan and allow it to heat up. Before making the first batch, give it a gentle wipe with paper towels to remove any big blobs of oil. This will give you perfect browned pancakes

Batter: Your batter should be slightly lumpy and should pour easily but should not be runny

Mixing ingredients: Mix the dry and wet ingredients separately. You can then combine them just before cooking. Mix the dry ingredients just as much as you want and do the same for the wet ones, but once you have combined them, only use a light touch. Over mixing the batter will make the pancakes heavy and flat.

Flipping the pancake: Wait and only flip your pancake after you have seen bubbles form in the centre of the pancake. When flipping, remember it is once. Flip your pancake only once!
