Easy recipe: Chuck steak with sautéed sweet corn

Chuck steak is a cut of beef and is part of the sub primal cut known as the chuck. The typical chuck steak is a rectangular cut, about 1 inch (2.5cms) thick and containing parts of the shoulder bones, and is often known as a “7-bone steak,” as the shape of the shoulder bone in cross section resembles the numeral ‘7’. We will pan sear the steak then roast it in the oven for about 45 minutes. We will then sauté some sweet corn with butter to bring out the rich flavour and sweetness of the sweet corn then toss the sweet corn on the beef.

What you will need:

750g chuck steak

Salt

2 tablespoons oil

1 teaspoon garlic ginger paste

150g butter 

1 stick herbed rosemary

1/2 bunch fresh coriander

4 sweet corn boiled

Cherry tomatoes for garnish

What to do:

Clean the steak and sprinkle some salt on it and rub it all over. Sprinkle some rosemary on each side. Set aside to rest for about 20 minutes.

In a non-stick pan over medium heat, add the oil. When it’s hot, pan sear the steak until brown (about 5 minutes) on each side. Place the steak on a baking tray and bake in the oven at 200 degrees celcius for about 45 minutes. Five minutes before removing it, throw in some cherry tomatoes and let them roast in the same steak tray.

Cut the boiled sweet corn into thick slices. In the same pan over medium heat, add the butter, garlic ginger paste and sauté. Add the sweet corn and cook for 5 minutes then add the chopped coriander. Toss them up and pour over the steak once out from the oven. The hot butter will sizzle over the steak and add more flavour.
