Ingredients:
3 tablespoons lemon juice
2 tablespoons fresh parsley, minced
1 teaspoon sugar
1 clove garlic, finely crushed
1/3 cup extra virgin olive oil
1 red bell pepper, deseeded and cubed
1 yellow bell pepper, deseeded and cubed
1 orange bell pepper, deseeded and cubed
1 green bell pepper, deseeded and cubed
Directions:
In a bowl, combine the lemon juice, parsley, sugar, garlic and extra virgin oil and whisk to blend through.
In a separate bowl, place the peppers, pour the dressing over the salad and toss to coat.
Add salt and pepper to taste. Put in the fridge to chill then serve.
Serve chilled.
