How to make this delicious Baked tomatoes, spinach and eggs

After the large and heavy meals we enjoyed during the holidays, it’s back to reality. The pockets are almost, if not already, empty and we have several weeks to go before pay day.

What to do but be very creative in the food department? With just about Sh300, you can have an all-rounded healthy meal. Serve with toasted garlic bread.

Serves: 3-4

Prep Time: 10 mins

Bake Time: 15-20 mins

Ready In: 25-30 mins

Ingredients:

1 bunch spinach

? teaspoon garlic powder

? teaspoon red pepper flakes

Salt and pepper to taste

2 medium sized tomatoes

4 or 5 eggs

2 tablespoons cooking cream

½ cup cheddar cheese, shredded

Directions:

Pre-heat the oven to 200 degrees Centigrade or gas mark 6. Coat a casserole dish with non-stick spray or coat/brush with vegetable oil.

In a pan, steam the spinach until wilted. Remove from the pan (without the water).

Cut tomatoes into chunks and place them in the casserole dish. Sprinkle spinach over the tomatoes. Season with the garlic powder, red pepper flakes, salt and pepper (freshly crashed black pepper gives a better taste).

Crack the eggs on top of the spinach and tomatoes. Drizzle cream over the vegetables, and finally top with shredded cheese.

Bake for 15 to 20 minutes, or until the egg whites are opaque but still soft and moist (eggs should wiggle slightly when you shake the dish).

Exact cooking time will depend on the size and shape of your dish.
