Easy recipe: Avocado, dates and cashewnuts shake

Ramadhan mubarak. Let’s make a simple and delicious avocado shake. Usually, avocado is highly known for making salads and savory treats but, at the coast, our tradition is using avocado in thick drinks. Some like to blend it with water and sugar while some prefer to blend it with milk and sugar.

Today, we will give it an extra touch with dates instead of sugar (which is my brother-in-law’s creation when he was on a strict diet). For dinner as a complete meal, he would have this shake with peanuts and without the ice cream.

What you will need:

1 large avocado, halved

500ml ice cold milk

1 cup dates, seeds removed

4 cloves of cardamom (use seeds only)

500ml milk

1 cup cashewnuts

1 orange (for garnish)

500ml vanilla ice cream (optional)

What to do:

Scoop out the avocado flesh and put it right away into a blender jug. Add in the dates and make sure no seeds have remained in the dates. The seeds are too tough and will spoil your blender.

Add the cardamom seeds. If you have powdered cardamom, use 1/4 teaspoon. Add in the milk then add 3/4 of the cashewnuts. Reserve the rest for garnish. Once everything is in the jug, give it a good blend for about 3 minutes, resting the blender every minute or so.

Once blended and smooth, pour the avocado mixture into your preferred glasses. At this point, the shake is good to drink.

However, if you wish to make it a little bit fancier (or if you have a sweet tooth), scoop some vanilla ice cream on top of the glass to add that extra sweetness. Slice some oranges and arrange them next to the glass for presentation.

Sprinkle the remaining cashewnuts on the ice cream and serve.
