We all love our chips, they are affordable and tasty. I tried this recipe and loved it so much that now I eat this more than I do potato chips.

Ingredients:
1kg courgette, sliced round into ¼ of an inch
1 cup all-purpose flour
1 cup corn starch flour
1 teaspoon onion powder
2 cloves garlic, minced
1 egg, beaten
1½ cups bread crumbs
Salt and pepper to taste
Vegetable oil for frying
Directions:
Place the sliced courgette on a tray and sprinkle salt on them (both sides) then set aside for 20/30minutes. This is done to remove some of the moisture from them
In a mixing bowl, combine the all-purpose flour, corn starch flour and onion powder.
In another mixing bowl, mix the beaten egg and minced garlic.
Mix the bread crumbs with salt and pepper then pour onto a tray.
Heat your vegetable oil in a shallow pan
Dip the courgette slices in the flour mixture and coat evenly all round, then into the beaten egg mixture, letting excess egg drip off then finally roll into the bread crumb mixture.
Shallow fry the courgette slices, until golden brown.
Set on a paper towel, pat off excess oil, sprinkle some herbal salt on them then serve with tartar or garlic sauce.
