20 chicken wings (serves 4)
For the marinade
Ingredients
-2 red onions, roughly chopped
-5 cloves garlic
-2 Scotch bonnet
-60g dark brown sugar
-100ml soy sauce
-4 sprigs thyme
-2 tsp allspice
-2 tsp cinnamon
-1 tbsp grated, fresh ginger
-Zest and juice of two limes
To serve
250g cooked rice
1 ripe mango, peeled and chopped
Chopped coriander
Squeeze of lime
Directions
1 Put all the marinade ingredients in a blender and blitz until you have a paste. Pour over the chicken, cover and put in the fridge. Leave it overnight so that it marinades.
2 Preheat the oven to 220C/Gas Mark 7, lay the wings out on a metal tray and bake for 30 mins or until cooked through. Then crisp the wings under a hot grill. Stir the rice, mango, coriander and lime juice together and serve with the chicken.
