Ingredients

1 x 2kg (4lb 8oz) fresh chicken

3 lemons

3 sprigs rosemary

3 cloves garlic, halved (optional)

1 tbsp olive oil

Serves 4

Pre-heat the oven to 200C/Gas 6. Rinse the chicken inside and out and place in a roasting tin.

Put 1 lemon (halved), the rosemary and garlic (if using) in the cavity.

Rub the olive oil over the chicken skin and sprinkle liberally with salt and black pepper.

Slice the remaining lemons and place over and around the chicken.

Roast for 1hr 30 mins, remove and cover with foil. Allow to rest for 15 mins before carving and serving with fresh seasonal vegetables.
