The holy month of Ramadhan has almost come to an end and Eid Al-Fitr is just around the corner, during festive seasons we all love the sweets to enjoy with a good cup of pure Kenyan tea in the morning as we visit friends and family.

Here is my delicious recipe of cinnamon rolls with a touch of saffron that you can easily make at home. Wishing you all Eid Mubarak.

Cinnamon rolls

Dough ingredients

3 cups all purpose flour

1/4 Cup of sugar

2 tablespoons of butter

1 egg

1 package of yeast

1/2 cup of warm water

1/4 cup of warm milk

1 teaspoon of salt

 

Preparation

In a bowl, put in the warm milk, water, yeast and two tablespoons of the sugar. Mix and let the yeast proof for 5 minutes.

In a separate bowl, put in the flour, salt and butter. Once the yeast has proofed, put in the egg and the remaining sugar and mix well.

Pour the liquid yeast mixture into the flour mixture and start kneading with your hands. Should the mixture be sticky, add in a handful of flour until nice Soft.

Let the dough proof until double in size. Roll the dough to a rectangular shape on a flat surface about 2 inches thin. Let's make filling and spread it on top.

Filling

2/3 Cup of brown sugar

1/4 Cup of butter

Ground cinnamon

50g butter for spreading on dough

In a medium size bowl, mix the vanilla, cinnamon and sugar until well combined. Set aside.

Using a kitchen brush, spread the butter on the rolled dough. Sprinkle enough of the cinnamon, vanilla and sugar mixture on top. The butter will help the sugar attach on the flat rolled dough.

Roll the dough with your hands lengthwise from one end to another like a Swiss roll. Use a string to cut about 1 inch slices of the cinnamon rolls. Place the slices on a rectangular baking tray and keep them in a warm place to proof and double in size about 15-20 minutes. 

Once proofed, bake in the oven for 25 minutes at 180 degrees Celsius until golden brown. While they are baking, let's make the glaze topping.

Glaze

2 cups of powdered sugar

1/4 cup of Milk

Pinch of saffron

In a bowl with the powdered sugar, add in the saffron and milk. Mix well to a thick liquid consistency. Once the cinnamon rolls are baked, let them cool to room temperature then pour the glaze on top and serve with a good cup of  Kenyan tea.
