Easy recipe: Sweet pepper omelette with grilled tomatoes

Looking for a quick, easy and delicious way to start your day? This vibrant sweet pepper omelette with grilled tomatoes is exactly what you need.

What you will need:

1 capsicum, diced

1 onion, diced

3 eggs

100g cheddar cheese, grated

Salt and pepper to taste

1 tablespoon oil

3 Red chilli slices (optional)

What to do:

In a non-stick pan over medium heat, pour the oil and sauté the onions until soft. 

Add in the capsicum or sweet pepper and continue to cook. Add some salt to taste and some black pepper and sauté until the veggies are soft and the onions are slightly golden.

In a separate bowl, break the eggs and beat them with a fork until combined. Pour the beaten eggs over the mushrooms and onions in the pan over medium heat.

Tilt the pan slightly so that you distribute the eggs all over the inner edges of the pan. Ensure that eggs cover the veggies.

Reduce heat to low so that your omelette won’t burn, sprinkle the cheese on top and then add in some cheese.

Flip the eggs in the pan to cook on the other side for about a minute or so.

Garnish with coriander and serve with grilled tomatoes. Enjoy!
