Most persons lack soups especially when they prepare dry meals at home, here is the simplest way to use your tomatoes to prepare a sweet soup easy to accompany every meal.

Ingredients

- Butter or oil

- Bacon trimmings, (optional)

- Onion, diced

- Carrot, diced

- Flour (corn flour or wheat flour)

- Tomato

- Tomato puree

- Stock, (vegetable or chicken)

- Bouquet garni

- Salt, pepper

- Croutons

• Stale bread

• Butter or oil

Method

1. Melt the butter or heat the oil in a thick - bottomed pan.

2. Add the bacon, onion and carrots (mirepoix) and brown lightly.

3. Mix in the flour and cook to a Sandy texture.

4. Remove from the heat, mix in the tomato puree.

5. Return to heat. Gradually add the hot stock.

6. Stir to the boil. Add the bouquet garnish, season lightly.

7. Simmer for approximately 1hour. Skim when required.

8. Remove the bouquet garnish and mirepoix.

9. Liquidise or pass firmly through a sieve, then through a conical strainer.

10. Return to a clean pan, correct the seasoning and consistency. Bring to the boil.

11. Serve fried or toasted croutons separately.

N/B ~ If a slightly sweet or sour flavour is required, reduce 100ml vinegar and 35g caster sugar to a light caramel and mix into the completed soup.

HEALTHY EATING TIPS

• Use soft margarine or sunflower/vegetable oil in place of the butter.

• Toast the croutons rather than frying them.

• Use the minimum amount of salt - there is plenty in the bacon.
