Since the exposé on the ‘abuse’ of preservatives in meat on sale in supermarkets, I have received emails on what consumers need to look for when buying meat.
The traits to look out for differ from animal to animal depending on the species, breed and age, feeding regime, health of the animal before slaughter and the handling of meat. Good animal husbandry produces carcasses that are fatter, juicer, with the right meat colour and with good flavor.
