Let's cook Swahili coconut rice pancakes (vibibi vya nazi)
Ingredients:
2 cups rice (soaked overnight)
1/4 cup flour
1/2 cup sugar
1 egg
1 tablespoon yeast
1 cup water
3/4 cup coconut powder
Method
Wash and drain away the water from the soaked rice, put the rice and the rest of the ingredients in a blender and blend until smooth.
Pour in a bowl, cover and let it rise until double in size. Once risen, mix gently.

You will see some air bubbles piping up. Once you flip and they look golden brown, they are ready to serve.
You can make a sweet coconut sauce to top it up or serve it just the way it is with tea or coffee.
