Let's try one of my favourite and easiest recipes: chicken with lemon and herbs in thick sauce.

What you will need:

7-8 chicken drumsticks

200ml thick plain yoghurt

Four lemons, squeezed

One teaspoon of ginger paste

Two cloves of garlic, sliced

One teaspoon of black pepper

One teaspoon of turmeric powder

One tablespoon of oil

4-5 fresh curry leaves

Two bouillon chicken cubes

One large onion, sliced

What to do:

In a pan over medium heat, pour the oil then add the curry leaves. Saute and then add the sliced garlic and onion slices. Mix well and add the chicken cubes. Use a wooden spatula to saute.

Once mixed well, add the ginger paste then go in with the Tumeric powder. Mix well and then go in with the chicken drumsticks. Continue stirring until the flavours coat the chicken.

Cook for another five minutes and then add the lemon juice. Bring to a boil and add the black pepper. Follow with the thick plain yoghurt. Cover with the tight lid and let it cook for another 10 minutes.

Once the sauce is thick and coats the chicken, it is ready to serve with your favourite plain rice, garnished with some extra lime or lemon slices, curry leaves and a few chillies if you like. Enjoy!
