This chicken is delicious and simple to make.

What you need:

1 whole chicken, backbone removed

Salt to taste

1 teaspoon black pepper powder

1 teaspoon turmeric powder

1 tablespoon paprika

2 tablespoons white vinegar

70g tomato paste

1 tablespoon garlic, minced

1 tablespoon ginger, minced

What to do:

Lay the chicken flat in a casserole and add all the above ingredients. Mix well and cover with a cling film.

Once marinated, let the chicken stay in the marinade for about eight hours or even overnight to allow the flavours to infuse.

You could air fry the chicken for 35 to 40 minutes, flipping it in between. You may also roast it in an oven for about an hour at 180C. You can also opt to charcoal grill the chicken the traditional way.

Serve the chicken with ugali and greens/salad, or your favourite accompaniment.
