‘Ugali mayai’ or rather scrambled eggs with ugali, is a saviour which can be eaten as much as four times a week.

This meal is super easy and today, we will be learning how to cook it.

Ingredients:

Five Eggs

One onion

Two tomatoes

A piece of ginger root

Three cloves of garlic

Water

Salt

Cooking oil

Instructions:

Put cooking oil in a heated cooking pot. Introduce the onions and sauté till golden brown.

Add in the garlic and ginger paste and let it cook for 10 seconds. Put the tomatoes in the mixture as well and wait till they are soft and tender.

Add ¼ cup of water and cover to achieve a pasty mixture. Now crack the eggs into the mixture, one after the other and add salt to season.

Slowly and consistently, stir the eggs until they all turn solid. Continue with the process until the eggs are well scrambled, dried up and well cooked.

Serve while hot with Ugali or freshly toasted bread! Enjoy!
