What you did not know about Butternut squash

Did you know butternut is a fruit and not a vegetable? It has a sweet taste similar to that of pumpkin. It can be roasted, sauteed, toasted, pureed for soup or mashed. It can be a wounderful addition to a baby's first solid foods but it's also great for adults as it is packed with nutrients.

 According to the USDA National Nutrient Database, a cup of butternut has 437 per cent of Vitamin A needed for the day, 52 per cent Vitamin C and 10 per cent (or slightly more) of vitamin E, thiamin (vitamin B1) niacin, vitaminB-6, folate, pantothenic acid, magnesium and manganese.

With all that in a cup, butternut should be a must in ones diet. However, for anyone whose kidneys are not fully functional and are unable to remove excess potassium from the blood, butternut is a no-no. It's available for Sh40-Sh150 keeps for as long as 6 months, stored in a cool dark (not totally dark) place.
