How to prepare Grilled chicken pineapple sliders

A slider is an American term for a small sandwich, typically around two inches (5.1cm) across, served in a bun.
Over the weekend, a dear friend and his wife invited me and friends to the opening of their restaurant. On the menu, was grilled sweet and sour pork chops with grilled pineapple slices, which I love. While I was enjoying the meal, my friend, seated next to me, kept picking at my pineapple slices. She loves grilled pineapple.
So I thought why not share with her this recipe that has pineapple and chicken, her favourite meat? This is to you my dear friend.

Ingredients:
•Juice of 1 lemon and 1 lime, squeezed
• 1 tablespoon apple cider
• 3 pieces skinned chicken breasts, cut in half
• 6 pineapple rings
• 2 tablespoons teriyaki sauce
• 6 slices large onion rings
• 6 mini buns or scones
• 6 lettuce leaves
• Salt and pepper to taste
Directions:
•In a bowl, (not plastic) whisk the lemon juice, lime juice, cider vinegar, salt and pepper. Add the chicken to the mixture, coat evenly, cover the bowl with plastic wrap, and marinate in the refrigerator for 1 hour.
• Light your charcoal grill or preheat your oven grill to medium heat. Remove the now marinated chicken from the fridge 15 minutes before grilling. When ready to grill, remove from the marinade and shake off excess marinade.
• Grill the chicken for five to seven minutes each side, or until juices run clear when chicken is pierced with a fork. As the chicken is grilling, grill the pineapple slices until heated through and grill marks appear on the pineapple slices, this should take two-three minutes on each side.
• Slice your buns/scones in half, spread teriyaki sauce on each bun, then add lettuce leaf, then grilled chicken, onion ring then top with a remaining half bun/scone.
Note: Add cheese slices if you wish.
